Rise and Shine Kitchen: Cowboy Caviar

Cowboy Caviar
1 can of black beans, drained and rinsed
1 can of black eyed peas, drained and rinsed
1 can whole kernel corn drained, or 1 cup frozen corn
1 med green pepper and red if desired
1 large Jalapeno chopped fine, I took the seeds out
2 Roma tomatoes chopped
½ red onion chopped
½ cup chopped cilantro
2 tbsp. fresh lime juice
2 tbsp. of red wine vinegar
¼ cup olive oil
1 tsp salt
½ tsp black pepper
1 tsp sugar
½ tsp garlic pepper, or garlic power, or 2 chopped garlic cloves
A chopped avocado is optional.
Mix all together and serve with tortilla chips.
It will taste better if you make it the night before, so it can marinate.
